I'll go with Seven and Kevin Spacey's performance over both of them. He was in the film for only about 15 minutes but he stole the show.

It's not even close. Mitchum's Cady was a psychological study. DeNiro's was a cartoon character (but I should point out that I think the remake was still a good popcorn movie).
