I may start watching the Shield because i do really like SOA, it's my fav ongoing show right now along with Homeland,Mad Men and Game of Thrones since the new season of American Horror Story has been really dissappointing.
If you like Sutter's writing definitely watch The Shield. It wasn't all Sutter of course but he had a big hand in it and you can tell. The Shield is what got me started on him and now I'm hooked. The Shield was 7 seasons too and well worth watching.
And on the prequel, I'm not sure you could tell the whole story in a miniseries. It does sound interesting though if he took it to FX.
