Here's a little story for you. One of my husband's friend's family used to serve venison quite often. Venison meatballs and spaghetti, venison parmigianna, and so on. I just assumed that the dad was a hunter. Nope. He was a policeman, and he often kept the carcass as a first responder to a deer vs. car accident.


That's common practice here. If the deer is still fresh and itact there are quite a few people, who butcher it. I don't hunt, but many friends do, so I get a good supply of venison bologna, sausage, steaks and ground meat. I watch monday night football with friends and one of them has been bringing venison meat sticks with cheddar and jalapenos ground in. It's a good companion to beer.
