Since no one has answered: "How ya doin', guy?" was Fat Andy, one of the guys Henry introduced in that early scene in Sonny's restaurant. (BTW: the guy who played Fat Andy--Louis Eppolito--was one of the two former NYC detectives convicted in 2005 for having done hits for Anthony (Gaspipe) Casso, the boss of the Luchese Family.)
