Al Pacino - Scent of a Woman, Donnie Brasco and Scarface.
Robert DeNiro - The Deer Hunter, Taxi Driver and Cape Fear (not the best movie around, but I thought he was excellent in it).
Marlon Brando - A Streetcar Named Desire, On the the Waterfront and The Wild One.
Francis Ford Coppola - Bram Stoker's Dracula (I didn't much like it the first time I saw it but it's kinda grown on me), The Rainmaker and Apocalypse Now.

You didn't ask, but I'd add Duvall for "True Confessions" and "Stalin," though he's such a great and versatile actor that it's hard to pick a "best."
