I like The Waterboy soundtrack actually. That song, I have no idea what the name is, but I know the song, that plays when it shows Boucher (Sandler) on ESPN and the opposing coach hugs that notebook, perfect. And then they use Rush's Tom Sawyer during the Burban Bowl, it is excellent.

Hollywood Knights (it's soundtrack is so great, it actually delayed the films release because of rights/restrictions on the songs)

And of course, The Godfather Trilogy and it's lovely instrumental tracks from Nino Rota.
