Hey I want to make my own fried calamari at home. My father did it and it was good. What temperature and how long should I do it for nice crispy ones. And is it the same process as frying chicken with the egg, flour, and breadcrumbs or what?

No, absolutely not. Breading does not belong on calamari. Just flour. If you want, you can soak them in milk first. Then just roll them in flour and shake them off good.

Use a good oil with a high smoking point. This isn't the time to break out the extra virgin olive oil. Fry them in small batches so they don't crowd the pan and "steam" themselves. If you do that they'll never get crispy. Clean oil, about 375 degrees. And don't move them around too much. Let the coating "set" a bit before you touch them. Fry them til they're just crisp.

Lemon wedges and marinara. That's all you need to know smile .

But you need an oil that holds up to high heat. I mean, you can use olive oil. But you'll have to change it a few times because it doesn't hold up that long. You're better off with peanut oil. And if you have a peanut allergy, canola will work fine.

It's too bad that Gestapo Bloomberg outlawed trans fats. Not that you should be eating them every day. But nothing fries like the old goopy Frymax. Nothing.

Lol... I got hooked on calamari fritti in Italy when I was in the Navy. They always had sea salt and that made a great difference in taste. Lemon wedges to squeeze over the top is an absolute must!

Reminds me of another story.

I have a Grandson in Germany handsome Henry. I took the whole family to Germany to see his Baptism.

I also wanted to play stickball against what was left of the Berlin Wall. It was going to be my family against my son in laws family. We discussed it before we left. I explained the game to Jan my son in law.

I buy east Harlem shirts for,my team. I found a place to get hard spaldeens I think got it from EBay. I figure I can buy brooms there and use as stick ball bats

Get chalk to make a box strike zone on the wall.

I found a good place to play. The Gestapo head quarters was never torn down or bombed in WW2. They turned the building into for get what. It was like 300 yards from the old gate that separated east Berlin from west Berlin.

It had a narrow street for traffic to pass.

So now I wanted to go play. Going to put it on YouTube so my friends could see it.

Then all of a sudden no one wanted to do it. Is that fucked up or what bunch of punks. Afraid of getting arrested I guess. What is illegal about hitting a rubber ball at Gestapo head quarters.

It practically spoiled my whole trip.

I am hopping if I can make to Handsome Henry is 16 me and him can still do it. So I have not given up on doing it with him. He is 4 now so in another 12 years. That will make me only 86 yrs old.

What he did eat was eels from the east river he caught off a pier on a Hun 9 street. That I believe is still their today. He swam off that pier most of us did to except me. Never learned to swim. Never learned to ride a bike, but taught all four of my kids to ride a bike. Never went to camp. So what the hell did I do there?

Oh yes play street games, play football, play soccer, steal and fight. Plus get the occasional pussy.

Met Gestapo Bloomberg once at a Brunch he threw for respective student for Johns Hopkins university.

He made it a point to meet every parent of every student who might attend the university.

He attended Johns Hopkins then went to Harward. Actually he was very Nice to us.

Hey if you're in Queens and you want some good greek food, especially seafood, try a place called kyklades on ditmars in astoria. There's not too many places where you can get grilled octopus and stuffed grilled calamari, but that's one of them. Plus try some tyrokafteri.. thats spicy feta dip you just eat with bread. Good stuff

Hmm I really don't know. I only lived in astoria a short time and that wasn't near my neighborhood. I would just go there specifically for kyklades and go back to my area by the Broadway stop near titan foods. I'm an upstate hick mostly

Neptune diner is good. It was always a safe spot for good familiar foods. But kyklades is more of a specialized spot for stuff you rarely find outside of greece. But yeah any diner to a greek is like the olive garden example. Not great, not bad, but safe, quick, and familiar when there aren't many other spots open

If your ever in Jersey or for the people in Jersey, there's a little spot in Raritan called Uncle Vinnie's best calamari and seafood around imo....It's a small little place and you might have to wait for a table but its def worth the wait...Go and check it out, trust me you won't be disappointed..

start with fresh calamari, it can be found at any decent fish market. there's nothing wrong with the tentacles, but most prefer the rings as they fry up more evenly without clumping together. get the whole bodies, cut them yourself about 1/4 inch thick or so. perfection is not a must, i'd rather see some minor imperfections and know that my food didn't come from a fucking robot. avoid the frozen stuff, but alot of places will have fresh frozen, which is fine. if you get the frozen shit that's already cut up, well then you are probably the same type of person who buys pre-cut vegetables and there is no hope for you at this point! instead of the calamari, stick your head in the oil and rid the world of your terrible culinary practices! lol

soak in whole milk for at least a few hours, overnight is fine. this does 2 things: first, it will help remove some of the more offensive fishy smells and odors if you copped out and bought a cheap product. secondly, when you add it to the flour, it binds with the flour and creates a nice light breading. as far as the flour, it must be well seasoned! salt and pepper is fine, but i also add old bay and garlic powder. either way, taste it! nothing is more of a waste of time than under seasoning things. how many of us have seen people season their pasta water with such a small sprinkling of salt that we just wanted to dump it out and make them start again? do it right or don't do it at all!

fry it hot and fast, say around 375 in canola/veg/peanut oil. don't add too much at one time, it will not only clump together but will lower the oil temperature allowing the food to absorb more oil. this is known as bad frying! it cooks quick, only a couple of minutes. a tip when frying: the food is always going to appear a shade or 2 darker a few minutes after you pull it out of the oil then when it first comes out, so keep that in mind so you don't look like a fool serving dark brown squid!

serve with a nice spicy marinara and lemon wedges. another thing i enjoy is to toss it with some fresh squeezed lemon and a bit of chopped flatleaf parsley as soon as it comes out of the oil and it drained, which should always be done on a brown paper bag, not paper towels dammit! wink

Fuck squid make this

Landi's Pork Store Rice Balls Recipe

1 & 1/4 lbs- Rice
1 & 1/4 lbs- Mozzarella Cheese, finely diced
1/4 lbs- Ham, finely diced
1/4 lbs- Pepperoni, finely diced
1/4 lbs- Salami, finely diced
1/4 Cups- Dried Parsley
1/4 lbs- Grated Locatelli Cheese

Allow rice to cool before mixing.
Grind up the meat and mozzarella then mix together with rice.

Mix until it is easy to roll into a ball.

Then coat each ball with flour, dip in egg, then bread crumbs.

Fry until golden brown.

Then eat your self into the next life with a happy face smile
