With the holidays upon us, I thought it would be nice to share some favorite recipes. Santino had sent me a PM for my stuffing recipe, but I thought I would post it here in case anyone else is interested. I would love to get favorite cookie recipes, too.

Sausage Stuffing

2 loaves unsliced stuffing bread
1 lb. pork sausage, such as Jimmie Dean
1 cup minced onion (this is what the recipe calls for, but I use about half)
1 cup minced celery
1 1/2 cups of chicken broth
1 tbs. poultry seasoning
3/4 teaspoon pepper
1 tbs. thyme
2 teaspoons salt.

Simmer sausage meat in large fry pan until gray
Pour off aoubt 3/4 of the fat
Add onions and celery. Cook until onions are clear.
Cut the crusts off the bread and discard the crust (just a suggestion, but the birds in my neighborhood look forward to their annual Thanksgiving treat). Break the loaves into nickel sized pieces and put in a large bowl.
Add spices and toss.
Add meat and mix well.
Add hot broth and mix well.

Stuff your bird and bake.
