Paul is his first name. He got the "Walnuts" when he hijacked a truck that was supposedly electronics but turned out to be filled with walnuts.

I could've sworn I saw commercials with him touting some sports-talk show.... he was sitting on a kind of bar stool and two hot lookin' babes surrounded him.

I think Paulie's full name is Peter Paul Gualtieri. Sometimes he uses the alias "Mr. Walters" because in many Italian dialects, the "gu" makes the "w" sound, thereby making his last name sound like "Waltieri", which is close to Walters, and walnuts perhaps, but now I'm just reaching.
