I like the first three for the reasons TIS and Geoff mentioned. Beef tongue is not half bad when cooked properly. When I tried beef tongue for the first time, I had no idea that it actually was tongue, or I never would have tried it. Someone tricked me into tasting it, then after I had approved of the meat, was told its true identity. It's all good.
