I'm seriously considering making this prime rib on New Years (if I have it at my house). If not, I definitely want to try it soon. I think the only seasoning I don't have in the house is the horseradish and the wine. (btw cooking wine or any white wine??)

Use a wine that you would drink. Regular wine! We never use cooking wine.
