Cage's most acclaimed performance is in Leaving Las Vegas, which I've not seen (but own). I find him best when he's over-the-top: Wild at Heart.
I like Pitt; Se7en is brilliant, Snatch shows a little versatility, and Ocean's Eleven wouldn't have been the same without him. I always laugh, however, when a friend of me impersonates his "Oh my god!" at the end of Se7en.
