So on my trip to Vegas last week I ate at Bonnonos Pizzeria and had the Baked Ziti and Chicken Parmesan (catchy name for a food chain). Gotta say it was pretty damn good, even for a fast food joint. Originally being from Louisiana, I rarely get to taste much of any true Italian Cuisine that isn't Cajun or Creole infused (being I'm half Cajun half Italian) so I was wondering if any of you full blooded Italians on here could help me out with a recipe? Thanks and much appreciated!

1 Pound Dried Ziti
1 Jar of Marinara Sauce
Ricotta Cheese (15 ounces)
Mozzarella Cheese (16 ounces)
Pecorino Romano Cheese (about 5 ounces)
1 egg yoke
Freshly ground nutmeg (generous pinch)
Fresh Flat Leaf Parsley (handful)
Extra Virgin Olive Oil

Prep-Get large pot of water boiling and salted
Cut Mozarella into small cubes
Grate Pecorino Romano
Separate egg yoke from white
Fine Chop Parsley Mix Ricotta,
1/2 Pecorino Romano, Parsley & egg yoke well in large bowl
grate the nutmeg right into the mixture
Boil Ziti per package instructions, then drain well
Warm tomato sauce
Fold cooked Ziti and Mozzarella cubes and warmed sauce into the cheese mix

Pre Heat Oven to 425 degrees
Transfer mixture into Olive Oil prepared baking dish
Top with remaining Grated Pecorino Romano Cheese
Drizzle with Olive Oil
Cook about 25 minutes until golden/crisp/bubbly

There much better ways to make Baked Ziti, but this is much quicker and still tastes great. Good luck and enjoy.

For baked ziti, the key ingredient is the tomato sauce (gravy). Focus on making good sauce (best from canned or fresh tomatoes), and it'll make any recipe better.

We have put chopped up meatballs or sausages in it but usually no, however the meat is served , on the side.

Sounds amazing. Crawfish not easy to get in a lot of places but I like 'em a lot. How'd you make it?

My wife makes a good baked ziti. It all in the gravy and the cheese you use.

You know chicken parm was a relatively new thing. It used to be only veal parm. But some restraunts thought people would stop buying it because it was getting more and more expensive.

So they invented chicken parm because it was much cheaper. Surprisingly it was a hit.

I can't get myself to eat it. Have you ever seen a live chicken their disgusting and they stink.

Right. Similar statements could be made for any farm animal, I would imagine.

One of the arguments for becoming a vegetarian. I would have done that long ago, actually, if I had enough will power. Tried once... lasted three days.
