Speaking about ketchup tho, there's a place in Conn. called Louis' Lunch and they say it's a no no for ketchup on a hamburger(i think they will throw you out for asking...JJ), to me that's kinda odd.... What does everybody else think about that?

No, absolutely not. Breading does not belong on calamari. Just flour. If you want, you can soak them in milk first. Then just roll them in flour and shake them off good.

Use a good oil with a high smoking point. This isn't the time to break out the extra virgin olive oil. Fry them in small batches so they don't crowd the pan and "steam" themselves. If you do that they'll never get crispy. Clean oil, about 375 degrees. And don't move them around too much. Let the coating "set" a bit before you touch them. Fry them til they're just crisp.

Lemon wedges and marinara. That's all you need to know smile .


Does anyone else accompany this with vinegar peppers? I think it helps bring out the flavor.

I saw that place on Man Vs Food. They claim to have invented the Hamburger, and they serve it between to slices of toast. Here's the video.

Louis' Lunch claims to have invented the hamburger sandwich. It's the act of putting the patty between two slices of bread that earns the notoriety.
BTW - I prefer the tentacles to the rings. If you are ever in San Francisco Original Joes makes terrific fried calamari and Ernesto's isn't far behind but unfortunately that's really the best thing on Ernesto's menu lately.

Now that's a real deal burger! Ketchup is too strong takes away from the good flavors like the burger itself.
