Yogis Pork Saltimbocca! (RECIPE) - 09/02/07 01:15 PM

Well i found it in a recipe book but i cooked it and it was nice so its mine now you hear....!
OK? \:\)

Pork Fillet(enough to cut into 12 thin pieces)
12 slices Parma Ham
12 fresh Sage leaves
250g White wine
1 tablespoon olive oil
A clove of garlic
Green Beans
New Potatoes

Once the pork is pork is sliced up,on one side of the meat place a slice of parma ham and a fresh sage leaf.
Heat the olive oil and your garlic in a pan for a couple of minutes before putting your pork slices in. Make sure you put the side of the meat that has the ham and sage on in to cook first to seal it on. Cook each side for 3 minutes. When you have cooked all 12 pieces on both sides put your white wine in the pan and let it simmer a minute or 2 before putting your pork back in to simmer away in the wine for 8 to 10 minutes.

Of course while you have been doing this you will have been boiling up your veg. We had green beans and new potatoes but you could have whatever you like really!
Once the meat has simmered long enough and your veg is ready serve up and enjoy.
The pork with the ham and sage and the wine flavour will have you drooling like a simpleton i promise \:\)

P.S. The amounts listed should serve 4 but you can do more or less as needed!

I don something similar with veal instead of pork. And I always serve it on a bed of spinach steamed with garlic and olive oil. I'll have to try the pork next time, Yogi. It sounds great!

Steamed spinach with garlic and olive oil sounds lovely.
