My wife is going to make a few things for super bowl sunday, a taco bar, meatballs, and other snacky foods, but mostly I just wanted to share a Chili recipe I found for the Colts.


Colts Chili

Serves 8 to 10 easily
2 pounds ground beef
1 pound bulk Italian sausage
3 (15-ounce) cans chili beans, drained
1 (15-ounce) can chili beans in spicy sauce
2 (28-ounce) cans diced tomatoes with juice
1 (6-ounce) can tomato paste
1 large yellow onion, chopped
3 stalks celery, chopped
1 green bell pepper, seeded and chopped
1 red bell pepper, seeded and chopped
2 cans chopped green chilies
1 tablespoon bacon bits
4 tablespoons beef bouillon paste
1 can beer
1/4 cup chili powder
1 tablespoon Worcestershire sauce
1 tablespoon minced garlic
1 tablespoon dried oregano
2 teaspoons ground cumin
2 teaspoons Tabasco
1 teaspoon dried basil
1 teaspoon salt
1 teaspoon ground black pepper
1 teaspoon cayenne pepper
1 teaspoon paprika
1 teaspoon white sugar
3 drops blue food coloring (this is the most important step)

1. In large skillet, cook ground beef and sausage until browned; drain grease.

2. Pour in chili beans, spicy chili beans, diced tomatoes and tomato paste. Add onion, celery, green and red bell peppers, chile peppers, bacon bits, bouillon and beer. Season with chili powder, Worcestershire sauce, garlic, oregano, cumin, Tabasco, basil, salt, black pepper, cayenne, paprika and sugar. Allow chili to simmer for about an hour; cool and place in refrigerator overnight.

3. Warm chili either on stovetop or in slow cooker.

4. Right before serving, place three drops of "Colts blue" food coloring in pot and stir well while saying "Go Blue."

Chili doesn't need that many ingrediants - and certainly not blue food coloring sick

Mr. Babe is making his famous deep-fried chicken wings. I'm making my chili dip, which is made with ground beef sauteed with onions, tomato paste, chili powder, cumin, salt and pepper. Then you spread cream cheese in the bottom of a baking dish, pour the ground beef over it, and then top it all with sliced monterey jack cheese. I put it in the oven until the cheese bubbles and serve it with tortilla chips.

I also bought mini hot dogs and crescent rolls to make pigs in a blanket, and Friday's spinach dip. And, of course, beer, soda, chips and Doritos.

I don't know, the first 14 ingredients in the Colt's Chili looked good but then it seems like it all went down hill.

The only reason I know is that they're broadcasting a new episode of "Glee" afterwards. whistle

Well, it's over, but my wife and two younger kids watched the game with good friends. We brought some pizzas, rum and beer. The friends provided some delicious fettucine alfredo, wings, sausage and desserts. There were about 30 of us ranging in age from 2 to 80.

My older son had some friends over our house. They had pizza, chips and some other things.

We had meatball sandwiches and just to show which team I was supporting, I brought bratwurst that I had steamed in beer and then browned on the grill. All of the Eagles fans I was watching the game with dined on bratwurst. To be fair, the Eagles fans were more supportive of the Packers than the Steelers, so it was a "friendly" crowd. Not so much for the first round of the playoffs when the Pack visited the Eagles.
